This professional Yanagiba sashimi knife is crafted from Japanese Hitachi Yasuki SLD high-carbon steel, built for precise sashimi preparation and commercial kitchen use.
Heat-treated to HRC 62±2, SLD steel delivers exceptional edge retention, rigidity and toughness. It resists chipping and rolling far better than traditional Japanese Aogami and Shirogami carbon steels.
Its corrosion resistance is improved compared with standard carbon steel, making it suitable for daily raw fish and seafood work. Please note: SLD is not fully stainless steel. Simple cleaning and drying after use will maintain its best condition.
